You don't say what version of exchange, but certainly with ex2000 you can set
the properties of your storage group to use circular logging. I suggest you
read up on the M$ support site the implications of doing this.

Simply deleting the log files is NOT advisable. You don't need them until
your server crashes, then you will find that your mail stores won't mount
without being able to replay the transaction logs that you have just deleted!
Leave them alone.
