I found (find) "Exchange 2000 Server 24seven" by Jim McBee to be quite good. It's more on administering E2K rather than on installation.
BTW (to whomever is readling/listening), is Paul R (I'm not even going to try the spell the last name), going to do a book on E2K? I came to rely quite a bit on his book on 5.5.
