A good "theory of operation" book is Tony Redmond's "Microsoft Exchange Server for Window's 2000", from Digital Press. Another very good book is Jerry Cochran's "Mission-Critical Microsoft Exchange 2000" also from Digital Press. However I would recommend that you read the first, leaving the second for later on.
