Paul, I'm probably overly paranoid, but I would not install MBSA on the Exchange box. If memory serves me correctly, you can run this software remotely and still gather the patch information. Avoid installing Outlook on the server. You don't mention this, but I always install the network monitor that comes with Windows 2000. This is not installed by default, and requires a reboot. Often when I get a quirky problem, Microsoft will want to take a packet capture. Having this installed saves having to plan a reboot of the Server.
