You're all talking like it's an either/or situation. The fact is that if you have your mail sent to Postini or some other similar service, it's available both on the wire and on their servers, and to make matters worse there are more wires involved. If, on the other hand, it comes straight to you then it's as secure as it's possible to get with *regular* e-mail.
