No, no, no... If you set it in IIS, Exchange will come around and whack it sooner or later. This setting must be change in System Manager.
Drill down through "Administrative Groups", "Servers", "Protocols", "HTTP", "Exchange Virtual Server", and right click on the Exchange virtual directory. Select "Properties" and click on the "Access" tab. Click "Authentication". At the bottom will be a spot for default domain.
