Paul: Your problem with speed may be that you are doing BLB (Brick Level Backup) and not just a DB backup of the Exchange DB.
If you want to speed things up by a hundred fold (guesstimation), stop doing BLB, implement the "Recover Deleted Items" features; find the necessary information in the FAQ.
