The Exchange server receives the emails from Unix.#
I shall look at the option of tcpdump. I have requested logs from the
unix system as well.

I could be mistaken, but I thought that IMAP was a "receive only"
protocol.  I think you will want to look at smtp logging on your
exchange server.  Although cumbersome, the logging to an access database
functionality was a successful scenario in the past for me.

You actually may find it easier to run tcpdump on the Unix box to
capture packets and then inspect in wireshark to troubleshoot the
sending problem.
Also take a look at the logs on the Unix box.
