Back when we migrated from Exchange 2003 to 2007, we outsourced the work to a company with expertise in this. The technician they assigned to the job did the entire thing remotely.
So I'd say yes, there's a market out there. I've run into several Exchange crises over the years that were solved by outside techs using remote access. We were a quiet little company for years and I was the only IT person. We might have only called once or twice a year, but there might be a lot of companies like ours with a pretty solid admin that needs help from a guru now and then, particularly if the system is down. The real trick might be connecting with your potential customers.
