So If I set up a client on a Windows box for [EMAIL PROTECTED] using the pop3 blah2.com, I only want to receive mail for [EMAIL PROTECTED], not also [EMAIL PROTECTED]

This sounds like a thoroughly debian-specific question;
you should get a better answer on the debian-specific exim mailinglist.
