Adam, check out the Jagannath health food store on Kuznetsky Most 11. You
will be able to find just about everything you need there, including fresh
tofu. They have both curry pastes and soy protein (what you call quorn). The
LavkaLavka stores are very expensive, but they have some full-grain products
(like spelt pasta). Also check out the Indian Spices shops
(http://www.indianspices.ru). There is also an Oriental food shop on
Prospekt Mira, in the block between the Ring Road and Grokholsky pereulok,
but I've never found a parking spot anywhere near there, so haven't checked
it out. 

 

Most decent supermarkets have a "health food" section - mostly for
diabetics, but often with soy protein and a few other foods vegetarians can
eat. And then during the four major Orthodox fasts, the supermarkets have
soy products on sale (mayo, tofu etc.). Some outdoor markets also have
Korean/Vietnamese or "health food" kiosks.  

 

At the Jagannath store, pick up a copy of the magazine Vegetarian. That has
lots of ads for other stores.

 

So don't worry - once you know where to look, you'll find just about
everything you need!
