[expert] modifying the install

Hopefully a quick question.

When installing mandrake we are given the option of a server,
workstation or custom.

I was wondering how I can customize the server instalation. Is it a plan
file with a list of rpms to install that I can edit to add and remove
extra files? Are these preconfigured kickstart files? If so where are
these config files?
