Just to answer my own question...
1: /usr/lib/sendmail-cf/README is very useful.
2: I added
FEATURE(relay_local_from)
FEATURE(promiscuous_relay)
FEATURE(accept_unresolvable_domains)
to /usr/lib/sendmail-cf/cf/redhat.mc
3: m4 redhat.mc > /etc/sendmail.cf
Now all the 'sender domain' and relaying checks are disabled.
