I would NOT upgrade. Only do virgin installs of 7.0-2 to an empty
ext2 partition. Even then, there are too many RPMs that DrakX fails
to install (mostly to do with networking, so you won't be affected) -
but which you can easily correct. If virgin installs don't yet fully
work properly, it's very unlikely that upgrades will.

In general, there are 3 alternatives:
1. Most thorough. Use kpackage (entered via DrakConf, or called
directly from a terminal window after doing an su) to uninstall the
packages you don't want.
2. Effective. Use K, System, SysVinit to remove the daemons you
don't want from the runlevels that you use.
3. Secure. Build an ipchains firewall to deny any attempts to
connect from outside to your ports with servers behind them.
