I have done something similar but without exchange. See if this works.  My
situation is that I have a Mandrake box acting as a firewall to the
internet.  Thier email accounts are at an ISP so what I do is I set up
Postfix or Sendmail and just run it. When I set up the clients I have thier
outgoing email address the address of the Mandrake box.  Mandrake just
bounces it to where it needs to go. I am also using ipchains for the
firewall.

Maybe not a good question for this forum.
I need to set up my ipchains firewall to allow my msexchange server to
handle all the email from outside. In fact I think I can handle setting up
the firewall, but I don't know what else I need to do from the Linux side
of things. Do I need to run sendmail or something to forward the mail to
exchange, or is it simply good enough to open the ports, and then set up
exchange. I guess I really don't know what I'm doing and any pointers would
be helpful. Even a pointer to a mailing list where this question would be
more appropriate.
