Easily done with XFree86-4.x and the appropriate hardware. What you are 
looking for is called multi-head and it's what I'm using now. I prefer it to 
xinerama (one desktop spread over several monitors).

I wrote a piece about it in the June 2001 issue of LinuxFormat magazine if 
you can get a copy.
