I'm with you on the head cheese thang, lurk.  Not gonna
become one of my favorites.  

But I also understand the "MMY guide book" approach.  In
my youth, growing up in Morocco, I was invited to a feast
up in the Atlas mountains by a family friend.  I was also
warned how much of an insult it would be to our Berber
hosts to not eat something placed in front of me.

So what is the first diah placed in front of me?  A big,
steaming bowl of soup that was staring at me.  Two big,
round, whole sheep's eyeballs were floating in the soup.

I don't know about you, but I have a hard time eating 
something that's staring at you as you eat it.  But I 
managed.  The things we do out of politeness, eh?  :-)
