Ha ha! That reminds me of something I had forgotten, after I started in the bakery, the university had just begun to institute ayurveda - among other things this meant we could not produce any sort of fermented products in the kitchen and that included sourdough bread. We were never allowed to make sourdough the entire time I was there.
