I lived in one of the pods right next to a guy named Mike Shay who I think is still on staff - when I got there in '85 he had been there nearly 10 years and said the food quality during the time you were there was way better than it had become in the mid '80s. He said they used to have a juicer right in the serving area and had big bags of carrots right next to it so one could make their own fresh juice - I believe he said that at one time they had their own cows to produce milk, but that had ended before my arrival (yeah, I know they are doing that again)
and you are right about the bakers working hard - Randy Kreig who preceded me was amazing and did it all by himself but he got burned out and became an ayurvedic tech - then there was Danny Von Phillipsborn and then me - I dunno who took over after I left. I have to say that the food at MIU, even though you were not there quite yet (1975-1980) was extraordinary and I, for one, appreciate the time, effort and skill that went into preparing seemingly endless quantities of it for us gluttonous students.
