No, unhealthier still are the trans-fats, the
partially hydrogenated oils, which are essentially
synthetic--polyunsaturated oils taken apart and
more or less put together again backwards, with
various additives.  Butter is a lot better for you
than margarine.

Terrific article.  But I wish the hell they'd
all get their stories straight.  How is the
layperson supposed to determine who's right?
