Play around with the dig tool, request the address for that server, see
how fast you get a response.  You might have a crappy DNS server, like
my ISPs always seem to have (so I run my own DNS servers).

That took 1.8 seconds to complete, for me.  A bit lengthy, but shouldn't
be too long for a mail client to complain about.

Dunno about that.  But programs starting up off-line because they think
you're off-line, when you're really on-line, has been a common complaint
about it.  Though you'd get a different sort of problem with Evolution
than you've detailed.
