I look into gconf-editor, in /apps/brasero but I can't find an option for to 
disable brasero as default burning app, the is two configuration key 
/apps/brasero/ask_default_audio and /apps/brasero/ask_default_data but it 
does't work for my.

Any other idea? Thank's
