That's not strictly true. If its POP3 in Outlook you specifically have to turn off deleting emails.
Still, a lot of places use IMAP these days, definitely worth having a look. Does it have webmail? Easiest way to check. But before the break in I was using Outlook, which, as far as I know, downloads it from the server. So from my, admittedly, limited knowledge, it would be gone from the email server.
