Another option, instead of ripping out walls, and
using shower paneling, is to use horse stall wall mats. They are practically
indestructible, made to withstand urine and poop, and completely non-porous. My
biggest issue with any of it is the floor to wall seam. Caulk dries and peels
away from the surfaces. Is there anything that can seal a wall to floor
connection and make it a completely water-tight seal that wont degrade with
time?

I don't have a drain but this sounds do-able.
It will be a MAJOR project. The room has cheap wood
paneling on the lower half now which has absorbed the pee and I plan to replace
that with the shower paneling which can be wiped off. Last time at
the grocery when I picked up three gallon jugs of vinegar, other people may
have thought I was preparing for pickles ... between the cats and MIL's
laundry, lots of pee here!
