As for the 2 needle method being a 'beginner' thing, I know knitters who use this method, who have been knitting for over 30 years. I believe Nancy Bush also recommends it. Someone who most definitely not a beginner. While the world won't end if I have to rip out what I've cast on, I've now wasted time that would have been better spent in actually knitting. It's using what will give you the best results, with as little stress as possible, which makes knitting an enjoyable endeavor.
