I have not found this to be true of Shetlands although it may depend somewhat on what you feed. Last year we had occasion to slaughter a 2 YO ram (he had become unmanageable). I had expected the meat to be 'rammy' I was surprised when it was not. The meat was excellent and mild after cooking the first roast just for us I served the next to guests.
