I've not seen a case where a complex midi piano performance can be easily 
converted to notation.  There are just too many notation conventions that 
need to be edited in for it to be any kind of a time savings.  Arpeggiations 
will be written as note tied to note for the duration of the passage as 
opposed to notes with ties to a chord, or with a pedal indication, and the 
list goes on.    I'd suggest downloading some midi files from the web if you 
want to do some tests, maybe with some piano pieces from the classical midi 
archive or some of the broadway midi sites.  

I have seen people work well with Hyperscribe, though I don't use it myself.  
But they are use to how it works and what they do isn't a performance of the 
piece.  They are working staff by staff, and layer by layer when necessary, 
rather than inputting both staves at once.
