If you want a perfect playback AND normal notation in Finale, you should 
seriously consider using a sequencing program such as Cakewalk or 
MasterTracks or PowerTracks to record the midi performance, then import 
this midi file into Finale and neaten it up to show as notation.  Then 
when you playback you can leave the PlaybackSetting/PlaybackOptions 
PlayRecorded... boxes checked.  That plays back all the recorded midi 
data, ignoring the notation.

There is a lot of neatening up necessary for using hyperscribe or the 
midi-transcription tool to enter notation.  It can be very frustrating 
and will take an awful lot of experimentation with quantization settings.

My advice would be to try it but be prepared for a lot of frustration 
and prepare the pianist ahead of time, so he/she doesn't think you are 
simply a fool who has no idea what she is doing.

And think seriously about using a sequencer rather than Finale.  Then 
you have the original midi file to use for playback while also being 
able to neaten things up in Finale for proper printout.
