When you get that snapping back to the left, it just means that you didn't drag the mouse far enough to the right to be sure that your intended right-end note was highlighted before you released the mouse button.

With the slur issue, are you saying that the slur remains on the stem end but curves the wrong way, or are you saying that the slur won't stay on the stem end but instead places itself on the notehead side?

Have you tried hitting ctrl-f to flip the slur to the other side of the notes?
