On Contemporary Hardware you cannot run OS 9 direct anyway. On my hardware I will notice the difference of 2k4 compared to 2k3. Screen redraws and some time intensive calculations will take longer. That's a fact. It is not just Bias Peak. Count into this Spark and Corel Draw. Both have now gone OS X only. The only carbon app where I don't notice slowdowns is Apple Works. And that really isn't compute-intensive, even compared to Finale. Midi support I cannot judge, although I see all major MIDI packages already going OS X only now (that includes the major packages you named, plus Steinberg) - they must be functioning. Audio I can judge and it is now better than it ever was in OS 9, there is simply no reason to stay with OS 9. OS X only. That's what's going to happen. I'd be surprised if MM doesn't go this step in 2k5. It makes no sense to invest in OS 9. Don't get me wrong: I have not really fallen in love with OS X yet myself. But we cannot stop the world rotating, and even if for the rotation monitor support one Robert Patterson is going to switch to Windows, it's not going to change any of this. OS 9 is dead as Darcy said. At least if you want to stay up to date with your software.
