If they do say that, they're wrong. Hyphens between syllables which almost have room but not quite is one example of something which requires zoom larger than 400% to ensure a match between screen and print.
I too find it odd that someone never zooms larger than 100%. I usually do speedy entry at 100% in scroll view. Almost everything else I do at 200%, or sometimes 150%.
