I think what Bob is talking about is that in OS X, when you change printers, it completely resets the "Page Setup" options for all of your existing documents, and so when you go to print them on the new printer, the Page Setup dialog box comes up, prompting you to specify the page size, scaling (if any), etc.

In System Preferences -> Print & Fax -> Printing, you can change the default paper size that appears in the Page Setup dialog box. This will allow you to simply hit "return" to okay out of the dialog box and advance to the Print dialog box. But I don't know if there's some way to force applications to skip the Page Setup dialog box entirely and go directly to the Print dialog box using the default Page Setup settings.
