Yes, that is what you do. On my 2003 default, the slash is in Articulation Slot #25, and you can assign it to any convenient key using the Shift key, so that you only have to click on the note while holding the key, and the stem acquires the slash easily. Or hold the key and drag across a group of notes, even on different staves, and they ALL acquire the slash.

The articulation as it appears in my 2003 default positions itself automatically, but I find it to be a bit too close to the notehead for my taste, so I changed the default vertical positioning rather than dragging every single slash individually. Your taste may vary. But it IS very easy to do.

As for the parts extracting correctly - they will extract with a half note with a slash through it, exactly as you put it in the score. If you want something different, like all the eighths written out, I advise you to put them in the score that way.

(oh yes, I almost forgot, the articulation method will not play back correctly, to the best of my knowledge. If you need proper playback, enter all the eighths in another layer, hide them, and mute the half notes. This is more of a kludge than I like to do, though, as I don't often need to play back that closely.)
