Hi Dean,
For umlauts, type opt-u, then the vowel.
Also, for future reference:
Acute accents are opt-e, then vowel. Grave accents are opt-`, then vowel. Circumflex accents are opt-i, then vowel.
You can see these extended characters with the Keyboard Viewer, which you can find by selecting from the input menu (if you have the input menu turned on in System Preferences -> International -> Input Menu). If you have it on, it probably looks like a little U.S. flag in your menu bar.
