The tags don't reside in AIFF files the way they reside in MP3 files. In other words, if the AIFF file is moved to another computer, the artist, composer, year, etc. tags will be lost.
But that doesn't change the effect of the "Keep iTunes Folder Organized" option, which works the same regardless of audio format.
Andrew, is there no "Consolidate Library" command in your OS 9 version of iTunes? That's the command you really want -- it will move everything to the iTunes Music Folder specified in your preferences.
