The answer to your question is influenced in part by the genre(s) of music you are doing or plan to do.

Primarily I edit and engrave 18
th and 19th century autographs of sacred music, choral with organ alone or with small orchestral accompaniment; also a little organ music, chorales, etc. Frequently lyrics, English and German, are part of the project. I presently use 2004. It meets my needs.

Since you have 2003 now, my suggestion is to use it for a while. Discover what works well for you and what does not. Replies from 2005 users can be helpful in comparing 2003 and 2005. You will likely get replies from users much more fluent and skilled in Finale than I. Their insights can be a great help.
