What you need to do (or at least what I do; there might be an easier way) is define a separate staff style for each instrument, in which the abbreviated staff name is the full name you want to display. Then apply the appropriate style to the first measure of the system for that instrument. So the flute gets a staff style with the abbreviated staff name set to 'Flute', and that style is applied to the first measure of the flute staff of each internal movement.

This can be a real pain for orchestral scores, but I think you're working just with chamber music, yes? What you might want to do is create a document with no templates, create the staff styles you need, and then save the staff styles library. Then you can just load that library into your other files without having to create the staff styles from scratch each time.

What would be nice is if you could define a staff style that said "Display full staff name instead of abbreviated staff name".
