The easiest way to do this is to save your document under a new name,
delete the staves you don't want using the Staff Tool, then Respace
Staves from the Staff Menu, and format as needed.
If it is a large score (which makes the method I described long and
unwieldy), then drag the staves around until they are in the order you
want, respace using the Staff Menu, create a new group containing only
the three staves you want, and extract just that group. Then close your
original score WITHOUT saving, because you don't want those staves
mixed up in your score!
