When you start up a new Mac for the first time, it will ask you if you
want to transfer all your data and settings from an existing Mac. If
so, all you need is a FireWire cable to hook up the two computers.
It's extremely easy and reliable.
You can have two simultaneous installation of Finale, so you probably
won't have to do anything more complicated than registering Finale on
the new computer. (If you like, you can also call Coda and get them to
unregister the old computer.)
On your underpowered system, GPO instruments will likely pop, cackle,
and distort quite a bit, and if you have several instruments playing at
once, playback will probably grind to a halt.

Honestly, GPO sounds great, but I'd suggest investing in a separate
computer for it. Like go out, get a Pentium 4 machine, windows, and
a good sound card. And slave it to your Mac Midi setup ;-)
That is REALLY no longer necessary with Fin2k6. The Audio Units
plugin version of GPO is worlds better than GPO studio.
That said, a 600 MHz G3 is still going to struggle -- but that's a
5-year old computer at this point! Time for Dean to upgrade.
