You can't get rid of the menubar along the top of the screen -- nor would you want to, especially in Finale, as most Finale menu items lack OS X shortcuts.

The actual Finale window leaves a 2-pixel gap on the left, right, and bottom edges when "maximized," allowing the desktop to show through (and making it easy to inadvertently switch applications by clicking in this space) -- however, the window can be manually expanded to eliminate this gap. (Unfortunately, Finale won't remember this window position.)

On the plus side, OS X eliminates the grey window bevel you got under OS 9, allowing you to see more of your document.
