Open up the Instrument List and click in the column marked 'M' (for Mute) next to the staff with the clapping. Or open up the Mixer and click the Mute button for that staff.

That only works if you want the staff off all the time. In Stan's case he has the clapping notation on the same staff as the traditional notation.

There are many ways to skin this cat. The easiest is to make a non-printing expression that turns the volume on that channel to 0 (CC#7=0) and then an non-printing expression to volume =127 when you want the other notes to play.

Or you could use an expression to change the MIDI channel at that point to another one that is either empty or a patch that actually sounds like clapping.

Or you could put these changes in the score using the MIDI tool.

Or you could use the MIDI tool to change all the on velocities to zero for the clapping section. (This could work if you had for some reason combined clapping with playing!)

There are even more tricks, but this is a good start.
