I know you'll get many other detailed responses from the list, but to get you started:

If you're on a Mac, you can print directly to a .pdf file. Just select PDF in the print dialog.

There are lots of programs that will do this for you. Google "create pdf" for a plethora of programs. A guy in our office uses PDFMaker and loves it. I use Adobe Acrobat--pricey but a great tool. Adobe now offers a cheap online solution for .pdf creation, as well. I haven't tried it, but a couple of people I've spoken with have given it good reviews. PDFWriter is another good program at a reasonable price.
