On a Mac and you are searching for files, how _do_ you specify a "wildcard"?

As in: "*fred*.jpg"

Damned if I know. I've been irritated with Mac's search ever since i upgraded to Tiger. That's when they introduced a new humongous search function that indexes your entire hard drive and will search for any scrap of data anywhere. I'm sure Darcy and others will tell me how wonderful that is and how much easier it can make my life and I just don't like change. Maybe so, but for me all it means is that when I want to find a file I have to click through a couple of menus just to say filename = "xxx". I miss the old, simple find function.
