Generally this is probably true, but a great deal can be done by the  player. 
 I have a french friend who is a professional bassoonist in a  french 
orchestra.  He plays the basson.  
 
When we first met on a gig we talked about his instrument. This  was 
obviously not the first time he had been challenged on this and he  reckoned 
that in 
blind tests most people mistook his instrument for the fagott -  when he wanted 
them to.  
 
He could still play in the light french style, but, when necessary, could  
also produce the bigger german sound.

 
I should add that this was some 10- 15 years ago.
