Impossible to answer since I don't know the cause of the issues you seem
to be having. You're mentioning MIDI - isn't the MIDI input/output
possible to test in the demo?
Midi has no latency. Latency issues occur when a computer
doesn't have enough CPU power or a fast enough data bus or
enough RAM and the samples are too large for the system to
handle easily.
So if the demo won't allow the same "unlimited" VST usage,
there would be no way to test latency issues.
And it's also impossible for someone to test latency issues
on their system in any meaningful way for another person
using a different system unless the two systems were
identical in specifications.
