Well, I'd disagree that copy shops cannot handle octavo size. Octavo is
about 7 x 10-1/2 inches (more or less), and if you set the margins
properly in Finale, you can print the document such that it is printed
on a 17 x 11 page which can be cut down to to 14 x 10-1/2, so as to make
an octavo sized booklet, after trimming. The biggest challenge is in
layout and placement of the pages, but I do it on a regular basis.
