haven't done these kinds of string parts in a long time, refresh my memory please?

i am preparing parts for an orch piece in which the section divisis change often. i will be preparing by desk (1.2. / 3.4. etc.) and often this will necessarily require 2 staves. however, in those cases where 2 parts can easily be included on one stave (same rhythm, 2 different notes), it is ok to do so, yes?

Absolutely. Although you could use stems-up, stems-down for clarity. But if it's just harmony notes in the same rhythm, dyads should be fine. We see it all the time. And in case of just a brief difference in rhythms, that measure could use stems up & down.
