Most of my upgrading of files and changing fonts happens in 2008 then I go to 2010. If you have 2008 try opening it, changing the fonts and then open in 2010.
Frankly, it sounds like the OS is giving you font conflicts probably due to (I'm assuming) the font IDs being the same.
