i am not at all sure this could help you for the key sig (which i almost never use) but you can change them in the staff on an individual basis: special tools: accidental mover, select accidental and pull up dialogue (2-click handle).
you can also assign a different character to appear when the flat is in parentheses, this is how i do 1/4-tones (almost all intervals work in transposition as well, if you do it right :)).
