Hello Bill,

If you are writing out a concert pitch version for piano, I would use 
cross-staff to indicate the middle part.

If ou want different staves for the three parts, it is OK in a C 
score to change clefs for the middle part; but if you want it all in 
one clef you could use the modern tenor clef - the G clef with 8 
underneath - for the part. In any case, I would not use two staves 
for the middle part.
